Our garden is abundant with basil and tomatoes! If yours is too, you might enjoy this quick and easy recipe for tomato/basil/mozzarella bruschetta. No bread on hand? Make it a salad or side dish. Regardless of how you use it, making it is easy. Warning: I made this without measuring anything.
What you need:
Fresh mozzarella cheese
Extra Virgin Olive Oil
Chop tomatoes and basil, place in bowl. Cut cheese into tiny chunks, mix with tomato and basil. Drizzle olive oil and balsamic vinegar. Add salt, pepper, garlic powder to taste. Combine all ingredients and voila! You have a salad or bruschetta.
Leftovers taste great the next day, too!
